Jag &#8221;sm\u00e4lte&#8221; den rensade purjol\u00f6ken som skurits i strimlor i lite brynt sm\u00f6r och sp\u00e4dde med en aning havregr\u00e4dde men om man utesluter sm\u00f6ret blir det en vegansk m\u00e5ltid, f\u00f6rutsatt att man \u00e4ven hoppar \u00f6ver parmesanen. Det blev en mycket god vegetarisk pastamiddag med fr\u00e4scha smaker. Just purjol\u00f6ken passade v\u00e4ldigt bra med sin milda smak till avokadon och limejuicen piggade upp medan parmesanen ger s\u00e4lta, umami och ytterligare fyllighet till<\/strong> <strong>den kr\u00e4miga s\u00e5sen. Salta det v\u00e4l innan du l\u00e4gger i pastan men se g\u00e4rna till att koka pastan s\u00e5 den \u00e4r klar samtidigt som s\u00e5sen f\u00f6r b\u00e4sta resultat. <\/p>\n\n\n\n<p>L\u00e4gg den strimlade purjol\u00f6ken i en stekpanna eller kanske \u00e4nnu hellre en kastrull elle sauteuse (s\u00e5skastrull) med sm\u00f6r och lite salt. L\u00e5t &#8221;sm\u00e4lta&#8221; \u00f6ver medell\u00e5g v\u00e4rme och koka tillsammans med en skv\u00e4tt havregr\u00e4dde eller vanlig gr\u00e4dde tills purjol\u00f6ken blivit helt mjuk. Riv osten och st\u00e4ll \u00e5t sidan s\u00e5 l\u00e4nge. <\/p>\n\n\n\n<p>L\u00e4gg avokadon med lime och lite salt i en h\u00f6g smal bunke och mixa med stavmixer tills du f\u00e5tt en sl\u00e4t avokadocr\u00e8me, smaka av och st\u00e4ll \u00e5t sidan s\u00e5 l\u00e4nge.
