V\u00e4ldigt<\/strong> <strong>gott och praktiskt och ganska l\u00e4tt- och snabblagat till en romantisk middag f\u00f6r tv\u00e5 eller flera, till exempel till Alla Hj\u00e4rtans dag &#8211; och \u00e4ven efter den! <\/strong><\/p>\n\n\n\n<p>F\u00f6r\u00e4lskade havskr\u00e4ftor \u00e4r ett recept fr\u00e5n Leif Mannerstr\u00f6m. Jag tycker att det blir extra schvung i s\u00e5sen med Noilly Prat i till\u00e4gg till Pernod och cognac &#8211; sprit \u00e4r smakb\u00e4rare, som bekant, och den torra franska Vermouthen bidrar med s\u00e5v\u00e4l fyllighet som syra tillsammans med en aning citron som jag tycker f\u00e5r s\u00e5sen att lyfta extra smakm\u00e4ssigt. Dessutom har jag g\u00e4rna f\u00e4rsk och torkad dragon i s\u00e5sen, som jag tycker m\u00f6ter anissmaken som finns i Pernod. <\/p>\n\n\n\n<p>Den som vill tar sj\u00e4lvklart skalade havskr\u00e4ftsstj\u00e4rtar. <\/p>\n\n\n\n<p>Jag g\u00f6r g\u00e4rna i ordning s\u00e5sen utan r\u00e4kor, havskr\u00e4ftor eller scampi n\u00e5gon dag i f\u00f6rv\u00e4g, sedan f\u00e5r den st\u00e5 kallt tills man v\u00e4rmer upp den inf\u00f6r servering samtidigt som riset kokar. Uppe till h\u00f6ger ser du de sista av l\u00e5gorna<\/figcaption><\/figure>\n\n\n\n<p><strong><em>G\u00f6r s\u00e5 h\u00e4r: <\/em><\/strong><\/p>\n\n\n\n<p>Stek l\u00f6k och vitl\u00f6k i olja och sm\u00f6r \u00f6ver medell\u00e5g v\u00e4rme tills l\u00f6ken blivit helt mjuk och glansig. Mot slutet tills\u00e4tter du \u00e4ven den finstrimlade f\u00e4rska f\u00e4nk\u00e5len och l\u00e5ter den steka med s\u00e5 den blir mjuk. H\u00f6j v\u00e4rmen och l\u00e4gg i scampin och stek den helt l\u00e4tt om den redan \u00e4r kokt, anv\u00e4nder du r\u00e5 fryst scampi steker du den s\u00e5 den \u00f6verg\u00e5r fr\u00e5n att vara gr\u00e5 till att bli r\u00f6d-rosa-orange i f\u00e4rgen. H\u00e4ll p\u00e5 cognac och Pernod och t\u00e4nd p\u00e5, men se till att inte vara under fl\u00e4kten n\u00e4r du g\u00f6r det. L\u00e5t l\u00e5gorna flamma ut. Lyft upp scampin och l\u00e4gg p\u00e5 ett fat s\u00e5 l\u00e4nge. Tills\u00e4tt tomatpur\u00e9n och kryddor, l\u00e5t fr\u00e4sa lite innan du h\u00e4ller p\u00e5 Noilly Prat, fiskfond och gr\u00e4dd och l\u00e5ter det hela puttra ihop tills s\u00e5sen tjocknat. Smaka av kryddningen och s\u00e4ltan. Innan servering l\u00e4gger du i scampin eller havskr\u00e4ftsstj\u00e4rtarna och str\u00f6r persilja \u00f6ver. Servera direkt med ett gott br\u00f6d att doppa i och sallad eller n\u00e5gon gr\u00f6nsak.
