En underlig tid med coronavirus, Covid-19 och uteg\u00e5ngsf\u00f6rbud i ett Paris som var som en kuliss av sig sj\u00e4lv, fast med mer poliskontroller. <\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Som tur \u00e4r var mataff\u00e4rer fortfarande \u00f6ppna, dock med l\u00e5nga k\u00f6er d\u00e5 de sl\u00e4ppte in en i taget (se fotot). Om du inte f\u00e5r tag p\u00e5 den &#8221;hemliga ingrediensen&#8221; Asadillo som ger fyllig underbar smak till vilken tomatbaserad s\u00e5s eller gryta som helst kryddar du bara upp lite mer och ser till att anv\u00e4nda riktigt bra tomater som du reducerar ner ordentligt. <\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Jag anv\u00e4nde frysta skaldjur, som dessv\u00e4rre v\u00e4tskar sig en del. Det<\/strong> <strong>\u00e4r viktigt att de bara steks helt kort f\u00f6r att inte bli f\u00f6r torra och tr\u00e5kiga. Gremolatan har du p\u00e5 precis vid servering f\u00f6r fr\u00e4sch\u00f6r. <\/strong><\/p>\n\n\n\n<figure class=\"wp-block-image size-large is-resized\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/files.katinkaskitchen.com\/1FA081AA-77E8-46C4-83C5-BF231E5895B9-1024x1024.jpg\" alt=\"\" class=\"wp-image-32490\" width=\"512\" height=\"512\" srcset=\"https:\/\/files.katinkaskitchen.com\/1FA081AA-77E8-46C4-83C5-BF231E5895B9-1024x1024.jpg 1024w, https:\/\/files.katinkaskitchen.com\/1FA081AA-77E8-46C4-83C5-BF231E5895B9-300x300.jpg 300w, https:\/\/files.katinkaskitchen.com\/1FA081AA-77E8-46C4-83C5-BF231E5895B9-150x150.jpg 150w, https:\/\/files.katinkaskitchen.com\/1FA081AA-77E8-46C4-83C5-BF231E5895B9-768x768.jpg 768w, https:\/\/files.katinkaskitchen.com\/1FA081AA-77E8-46C4-83C5-BF231E5895B9-1536x1536.jpg 1536w, https:\/\/files.katinkaskitchen.com\/1FA081AA-77E8-46C4-83C5-BF231E5895B9-2048x2048.jpg 2048w\" sizes=\"auto, (max-width: 512px) 100vw, 512px\" \/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\"><strong><em>Du beh\u00f6ver till 4 personer: <\/em><\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1-2 burkar eller f\u00f6rpackningar riktigt bra tomater, g\u00e4rna passata<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1-2 burkar Asadillo, en spansk konservburk p\u00e5 stekta tomater med rostad r\u00f6d paprika som ger v\u00e4ldigt fin smak till s\u00e5sen<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1-2 msk tomatpur\u00e9 av god kvalitet med fyllig smak<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">4-5 vitl\u00f6ksklyftor, skalade och hackade<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1 burk sardellfil\u00e9er i olivolja<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">en rej\u00e4l klick olivolja<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">g\u00e4rna n\u00e5gon dryg dl vitt vin<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1 liten sked r\u00e5socker &#8211; italienarna har alltid lite socker i sin tomats\u00e5s f\u00f6r att f\u00e5 fram den fina tomatsmaken och runda av lite av syran<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">salt, peppar och \u00f6rtkryddor <\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em>Till gremolatan: <\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">2-3 vitl\u00f6ksklyftor, skalade och finhackade<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">det finrivna skalet av en citron, v\u00e4l tv\u00e4ttad och g\u00e4rna ekologisk anser jag<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">en nypa salt<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">en rej\u00e4l n\u00e4ve sl\u00e4tbladiga persilja, sk\u00f6ljd och hackad<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">lite olivolja<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em>\u00d6vrigt: <\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Skaldjur, frysta eller f\u00e4rska &#8211; jag tog en blandning av tigerr\u00e4kor, pilgrimsmusslor och vanliga musslor<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">en klick sm\u00f6r och olivolja att steka i<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pasta efter tillg\u00e5ng, tycke och smak &#8211; jag v\u00e4ljer g\u00e4rna linguine eller en bra tagliatelle till skaldjuren<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">en stor kastrull pastavatten som \u00e4r rej\u00e4lt saltat<\/p>\n\n\n\n<figure class=\"wp-block-image size-large is-resized\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/files.katinkaskitchen.com\/22313D0B-CE7D-4943-B028-6E98152810E9-1024x1024.jpg\" alt=\"\" class=\"wp-image-32491\" width=\"512\" height=\"512\" srcset=\"https:\/\/files.katinkaskitchen.com\/22313D0B-CE7D-4943-B028-6E98152810E9-1024x1024.jpg 1024w, https:\/\/files.katinkaskitchen.com\/22313D0B-CE7D-4943-B028-6E98152810E9-300x300.jpg 300w, https:\/\/files.katinkaskitchen.com\/22313D0B-CE7D-4943-B028-6E98152810E9-150x150.jpg 150w, https:\/\/files.katinkaskitchen.com\/22313D0B-CE7D-4943-B028-6E98152810E9-768x768.jpg 768w, https:\/\/files.katinkaskitchen.com\/22313D0B-CE7D-4943-B028-6E98152810E9-1536x1536.jpg 1536w, https:\/\/files.katinkaskitchen.com\/22313D0B-CE7D-4943-B028-6E98152810E9-2048x2048.jpg 2048w\" sizes=\"auto, (max-width: 512px) 100vw, 512px\" \/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\"><strong><em>G\u00f6r s\u00e5 h\u00e4r: <\/em><\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Hacka den f\u00f6rsta m\u00e4ngden vitl\u00f6k och stek den \u00f6ver medell\u00e5g v\u00e4rme i olivolja med lite salt tills den blivit helt mjuk och glansig. L\u00e4gg i sardellfil\u00e9erna tillsammans med olivoljan de ligger och och l\u00e5t sardellerna puttra med s\u00e5 de &#8221;sm\u00e4lter&#8221;. Var inte orolig \u00f6ver m\u00e4ngden olivolja &#8211; den bidrar till s\u00e5v\u00e4l smak, konsistens som fyllighet. Tills\u00e4tt vinet och h\u00f6j v\u00e4rmen s\u00e5 du reducerar ner vinet innan du tills\u00e4tter tomaterna och asadillo om du har det. Tills\u00e4tt \u00e4ven tomatpur\u00e9n (extra viktigt om du inte f\u00e5r tag p\u00e5 asadillo som betyder ungef\u00e4r det lilla rostade). Tills\u00e4tt en liten sked r\u00e5socker. Krydda med peppar, en aning chili och \u00f6rter och l\u00e5t puttra \u00f6ver svag v\u00e4rme ganska l\u00e4nge. Den h\u00e4r tomats\u00e5sen kan du f\u00f6rbereda i god tid och kanske g\u00f6ra extra mycket av &#8211; spara en del till en annan dag med andra tillbeh\u00f6r s\u00e5 har du till ytterligare en middag. Har du i ytterligare en burk sardeller och \u00e4ven kapris f\u00e5r du en klassisk och otroligt god puttanesca. Mixa g\u00e4rna tomats\u00e5sen en aning med stavmixer. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">N\u00e4r det n\u00e4rmar sig servering g\u00f6r du gremolatan och droppar lite olivolja \u00f6ver s\u00e5 den h\u00e5ller sig fr\u00e4sch, pressa g\u00e4rna i lite citron ocks\u00e5. Koka upp vattnet till pastan, salta ordentligt och koka pastan al dente s\u00e5 du fortfarande har en k\u00e4rna i den. T\u00e4nk p\u00e5 att den mjuknar ytterligare en aning i s\u00e5sen p\u00e5 efterv\u00e4rmen ocks\u00e5.
