Vi hade lax i kylen som beh\u00f6vde \u00e4tas upp och d\u00e5 kom den h\u00e4r r\u00e4tten till &#8211; den g\u00f6r vi g\u00e4rna om! Otroligt snabblagat och gott! <\/strong><\/p>\n\n\n\n<p><strong>Det brukar ju vara m\u00e5ndagssoppa och tisdagspasta h\u00e4r i Katinkas Kitchen, men nu \u00e4r det Valborgsvecka s\u00e5 d\u00e5 blir det lite annorlunda.. Dessutom har jag inte hunnit\/orkat g\u00f6ra den soppa p\u00e5 vit sparris jag t\u00e4nkt ut, den kommer fram\u00f6ver<\/strong> <strong>i st\u00e4llet &#8211; njut denna goda pasta nu!<\/strong><\/p>\n\n\n\n<p>Spara \u00e4ggvitorna i ett glas med plast \u00f6ver eller burk med lock i kylen och g\u00f6r goda mar\u00e4nger eller n\u00e5gon efterr\u00e4tt p\u00e5 dem. Till exempel l\u00e4ttgjord platta mar\u00e4nger med god smaks\u00e4ttning. Stek den strimlade schalottenl\u00f6ken i en rej\u00e4l klick sm\u00f6r med olivolja \u00f6ver medell\u00e5g v\u00e4rme tills l\u00f6ken mjuknat helt utan att ta f\u00e4rg. Jag g\u00f6r det g\u00e4rna i en sauteuse, en korsning mellan en vid stekpanna och en kastrull med sluttande kanter. D\u00e5 kan jag h\u00e4lla den nykokta pastan direkt i s\u00e5sen och blanda runt. V\u00e4lj annars en stekpanna som du f\u00e5r plats med allt i. Tills\u00e4tt det finrivna citronskalet, peppra och salta lite. N\u00e4r din pasta ligger i vattnet och kokar h\u00e4ller du i den strimlade laxen i s\u00e5skastrullen. Tills\u00e4tt \u00e4ven pressad citron fr\u00e5n 1\/2 &#8211; 1 citron. Kn\u00e4ck \u00e4ggen och h\u00e4ll av \u00e4ggvitan (spara den som sagt g\u00e4rna till andra godsaker), st\u00e4ll gulorna i sina skalhalvor att v\u00e4nta s\u00e5 l\u00e4nge. Koka din pasta i rikligt med h\u00e5rt saltat vatten f\u00f6r b\u00e4sta resultat, precis som italienarna. N\u00e4r pastan \u00e4r perfekt kokt al dente med en liten k\u00e4rna h\u00e4ller du av den och h\u00e4ller den direkt i s\u00e5skastrullen eller -pannan. Tills\u00e4tt \u00e4ggulorna och det mesta av den hackade gr\u00e4sl\u00f6ken. Pressa i lite extra citron och kanske en skv\u00e4tt god olivolja (det \u00e4r viktigt att den \u00e4r mild och inte f\u00f6r besk). Blanda runt, toppa med mer hackad gr\u00e4sl\u00f6k och kanske lite strimlad f\u00e4rsk basilika. Det \u00e4r viktigt att \u00e4ggulorna blandas i f\u00f6rst i slutet s\u00e5 h\u00e4r, f\u00f6r att de inte ska koagulera &#8211; du ska i st\u00e4llet f\u00e5 en h\u00e4rligt l\u00e4tt kr\u00e4mig pasta med delikata smaker.
