N\u00e4r jag skulle laga en v\u00e5rmiddag inf\u00f6r Valborg gjorde jag en s\u00e5s p\u00e5 grillade citroner, ugnsrostad vitl\u00f6k, k\u00f6ttfond, madeira och rosmarin som fick ytterligare sp\u00e4nnande smak av lite ponzu (en japansk citrussoyas\u00e5s) och en aning yuzu samt lite Noilly Prat (en fransk torr Vermouth). <\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Det blev en mycket uppskattad s\u00e5s med b\u00e5de syra och fyllighet som serverades med helstekt rostas, sm\u00f6rstekt spenat och grillad gr\u00f6n sparris. L\u00e4gg citronerna med snittytan ner\u00e5t p\u00e5 ett ugnsfast fat som du gnidigt in med olivolja. L\u00e4gg \u00e4ven vitl\u00f6ksklyftorna med skal p\u00e5 fatet och st\u00e4ll in det i ugn som du v\u00e4rmt till 100 grader. L\u00e5t baka i cirka 1 timme tills s\u00e5v\u00e4l citroner som vitl\u00f6kar \u00e4r mjuka men inte br\u00e4nda. L\u00e5t dem svalna. Pressa ut saften och sila bort k\u00e4rnorna. Sila \u00e4ven bort en del av fruktk\u00f6ttet, det sparar du och tills\u00e4tter till exempel den sm\u00f6rstekta spenaten f\u00f6r extra fin smak. Tills\u00e4tt \u00e4ven lite peppar. L\u00e5t puttra \u00f6ver l\u00e5g v\u00e4rme s\u00e5 att smakerna frig\u00f6rs och blandas. Tills\u00e4tt \u00e4ven Noilly Prat och ponzu. L\u00e5t puttra lite till och smaka av s\u00e5 att smakerna \u00e4r balanserade &#8211; kanske lite mer av n\u00e5got; citron, Madeira, ponzu, Noilly Prat, peppar, fond..? N\u00e4r k\u00f6ttet \u00e4r klart h\u00e4ller du \u00e4ven i k\u00f6ttsaften fr\u00e5n ugnsformen. L\u00e5t koka ihop, vispa lite och sila sedan av, mosa ur ordentligt s\u00e5 du f\u00e5r med s\u00e5 mycket av vitl\u00f6ken som m\u00f6jligt f\u00f6r b\u00e5de fin smak och konsistens.
