Men det d\u00e4r med syrligt \u00e4pple till \u00e4r inte en s\u00e5 dum id\u00e9! <\/strong><\/p>\n\n\n\n<p><strong>Det h\u00e4r inbjudande fatet \u00e4r l\u00e4tt att f\u00f6rbereda f\u00f6r att precis innan servering toppa med brynt sm\u00f6r &#8211; vips har du en otroligt god f\u00f6rr\u00e4tt eller lunch att servera till dina g\u00e4ster. L\u00e5t \u00e5nga av och svalna l\u00e4tt innan du skivar den och arrangerar p\u00e5 ett vackert serveringsfat. Sk\u00e4r matjesfil\u00e9erna i bitar och l\u00e4gg \u00e4ven dem p\u00e5 fatet. Man kan v\u00e4lja att varva matjes och potatis eller som jag gjort h\u00e4r l\u00e4gga potatisen i ring omkring och sillen i mitten. Skala och sk\u00e4r \u00e4pplet i stavar och str\u00f6 dem \u00f6ver sillen. Toppa med hackad gr\u00e4sl\u00f6k och g\u00e4rna lite v\u00e5rl\u00f6k om du har. Peppra och salta l\u00e4tt med flingsalt, framf\u00f6r allt potatisen. Bryn sm\u00f6ret i en tjockbottnad kastrull \u00f6ver medelh\u00f6g v\u00e4rme. Skaka kastrullen i cirklar helt l\u00e4tt d\u00e5 och d\u00e5. L\u00e5t sm\u00f6ret puttra p\u00e5, efter ett tag blir det bubblor som s\u00e5 sm\u00e5ningom blir mindre och mindre och n\u00e4r de n\u00e4stan avstannat och du ser hur det blir lite m\u00f6rkare i mitten och en ljuvlig doft av n\u00f6tig sm\u00f6rkola sprider sig i k\u00f6ket tar du kastrullen fr\u00e5n v\u00e4rmen och l\u00e5ter den st\u00e5 och svalna en aning. D\u00e5 sjunker de solida mj\u00f6lkresterna till botten och du f\u00e5r ditt klarade brynta sm\u00f6r med hela sin underbara smakbild. Sila sm\u00f6ret genom en finmaskig sil (jag brukar ta en tesil) och se till att du inte f\u00e5r med grumset i botten. H\u00e4ll det klarade brynta sm\u00f6ret \u00f6ver det arrangerade fatet precis innan servering. Om det g\u00e5r l\u00e5ng till till servering h\u00e4ller du det avsilade sm\u00f6ret i en kastrull och v\u00e4rmer upp det igen precis innan du ska h\u00e4lla p\u00e5 det.
