Jag skulle testa att g\u00f6ra citronfloff men ins\u00e5g att sj\u00e4lva moussen n\u00e4stan var b\u00e4ttre innan den k\u00f6rts genom sifonen. N\u00e4sta g\u00e5ng serverar jag det i portionsglas med f\u00e4rska b\u00e4r &#8211; blir nog b\u00e5de gott och vackert. H\u00e4r har jag sprayat citronfloffet till en kaprisglass beurre sal\u00e9 (sm\u00f6rsaltig kola) med karamelliserade r\u00f6dbetor. Jag kommer att experimentera med gr\u00e4dde n\u00e4sta g\u00e5ng. D\u00e5 blir det i princip som 70-talets popul\u00e4ra efterr\u00e4tt citronfromage. <\/p>\n\n\n\n\n\n<p class=\"wp-block-paragraph\"><strong><em>Du beh\u00f6ver f\u00f6r ca 6 personer: <\/em><\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">3 \u00e4gg, delade i vitor och gulor<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1\/2 dl socker, g\u00e4rna r\u00e5socker<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">2 dl citronjuice<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1-2 dl gr\u00e4dde<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong><em>G\u00f6r s\u00e5 h\u00e4r: <\/em><\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">V\u00e4rm f\u00f6rsiktigt citronjuicen i en kastrull samtidigt som du vispar \u00e4ggulorna med sockret till en ljusgul por\u00f6s blandning. Vispa f\u00f6rsiktigt i citronen i \u00e4ggulevispet och blanda ordentligt innan du h\u00e4ller tillbaka blandningen i kastrullen och l\u00e5ter sjuda upp under konstant omr\u00f6rning \u00f6ver medelh\u00f6g v\u00e4rme. N\u00e4r kr\u00e4men tjocknat tar du den av spisen och l\u00e5ter den st\u00e5 och kallna helt. Vispa \u00e4ggvitorna till h\u00e5rt skum och v\u00e4nd f\u00f6rsiktigt ner dem i citroncr\u00e8men. Om du \u00e4ven vill anv\u00e4nda gr\u00e4dden vispar du den men inte alltf\u00f6r fast och v\u00e4nder f\u00f6rsiktigt ner den ocks\u00e5. Blanda ordentligt men f\u00f6rsiktigt s\u00e5 du inte f\u00f6rlorar luftbubblorna. Passera moussen genom en sil ner i sifonen eller ett literm\u00e5tt s\u00e5 att du kan fylla sk\u00e5lar eller glas med moussen. St\u00e4ll att stelna i kylsk\u00e5p.
