Tandooriugnarna gick att transportera och det var ofta pakistanier som serverade tandoori med naan n\u00e4r j\u00e4rnv\u00e4gen drogs fram i Indien. Traditionen att g\u00e5 p\u00e5 restaurang l\u00e4r vara ganska ny i Indien, d\u00e5 de besuttna tidigare gick hem till varandra d\u00e4r kockarna lagade delikata m\u00e5ltider. <\/strong><\/p>\n\n\n\n<p><strong>Jag g\u00f6r oftast chapatis som \u00e4r ett oj\u00e4st br\u00f6d till skillnad fr\u00e5n det h\u00e4r j\u00e4sta br\u00f6det, men n\u00e4r dottern \u00f6nskade sig mammans indiska gryta till f\u00f6delsedagsmiddag fick det bli naan-br\u00f6d. I avsaknad av en ultrahet tandooriugn tar man en het stekpanna i gjutj\u00e4rn. Ta inte i allt p\u00e5 en g\u00e5ng. Det kan h\u00e4nda att du beh\u00f6ver mer mj\u00f6l &#8211; det viktiga \u00e4r att du f\u00e5r fin konsistens p\u00e5 din deg, s\u00e5 att den blir smidig och inte f\u00f6r kladdig men heller inte f\u00f6r torr och stabbig. Kn\u00e5da den ordentligt med h\u00e4nderna eller i en maskin. L\u00e4gg den att vila under en k\u00f6kshandduk p\u00e5 dragfri plats tills den j\u00e4st till dubbel storlek, ca en timme. <\/p>\n\n\n\n<p>Dela degen i mindre delar och kavla eller tryck ut dem till avl\u00e5nga platta br\u00f6d. V\u00e4rm gjutj\u00e4rnspannan s\u00e5 att den \u00e4r riktigt het. L\u00e4gg i ett br\u00f6d och passa det tills det b\u00f6rjar bli bl\u00e5sor p\u00e5 ovansidan och f\u00e5 m\u00f6rkare fl\u00e4ckan p\u00e5 den sida som grillas i pannan. V\u00e4nd br\u00f6det och stek det klart p\u00e5 andra sidan. L\u00e4gg br\u00f6det p\u00e5 en bricka, i en korg eller p\u00e5 ett fat och pensla med sm\u00e4lt sm\u00f6r eller ghee.
