S\u00e5 h\u00e4r i midvintern \u00e4r det inte s\u00e5 mycket bev\u00e4nt med gr\u00f6nsaksdiskarna h\u00e4r uppe i norr, \u00e4ven om vi kan f\u00e5 tag p\u00e5 det mesta men som d\u00e5 transporterats fr\u00e5n Afrika, Asien eller Sydamerika. Jag v\u00e4ljer hellre frysta haricots verts \u00e4n de som rest hela v\u00e4gen fr\u00e5n Peru. Faktum \u00e4r att de gr\u00f6nsaker som \u00e4r fr\u00e4schast mitt i vintern \u00e4r rotfrukter, som man verkligen kan frossa i. <\/strong><\/p>\n\n\n\n<p><strong>H\u00e4r har jag valt k\u00e5lrot, mor\u00f6tter och persiljer\u00f6tter som kokats i en citrusbuljong med smak av citron, apelsin, clementin, citrongr\u00e4s, limeblad, ingef\u00e4ra och schalottenl\u00f6k tillsammans med gr\u00f6nsaksbuljong. De varma nykokta rotfrukterna marineras sedan i en lag p\u00e5 nypressad saft av samma citrusfrukter tillsammans med en god olivolja. Allts\u00e5 b\u00e5de citruskokta och citrusmarinerade f\u00f6r extra smak och fr\u00e4sch\u00f6r. <\/strong><\/p>\n\n\n\n<p><strong>N\u00e4r det \u00e4r dags att servera dem kan du antingen anv\u00e4nda dem kalla eller snarare rumstempererade i en soppa eller till n\u00e5gon r\u00e4tt eller som h\u00e4r servera dem som huvudtillbeh\u00f6ret till l\u00e5ngsambakad torskrygg. D\u00e5 v\u00e4rmer jag p\u00e5 dem i lite sm\u00f6r med en del av marinaden. Det fullst\u00e4ndiga receptet p\u00e5 r\u00e4tten finner du i eget inl\u00e4gg h\u00e4r bredvid. <\/strong><\/p>\n\n\n\n<p>H\u00e4r har jag valt mor\u00f6tter, persiljer\u00f6tter och k\u00e5lrot som \u00e4r en alldeles underskattad rotfrukt tycker jag. Den piggas upp av citrusfrukterna och \u00e4r vackert gul. Persiljer\u00f6tter liknar palsternackor i smaken men en aning mildare. Man kan \u00e4ven t\u00e4nka sig en annan favorit; majrova, men den kan vara sv\u00e5r att f\u00e5 tag p\u00e5. Under tiden skalar och sk\u00e4r du rotfrukterna i bitar eller kuber. Koka rotfrukterna i buljongen ca 10 minuter tills de precis mjuknat men inte kokar s\u00f6nder. Sleva upp dem med en h\u00e5lsil och spara buljongen &#8211; den \u00e4r fantastiskt god att anv\u00e4nda till soppa. <\/p>\n\n\n\n<p>L\u00e4gg rotfruktsbitarna i en sk\u00e5l eller plastp\u00e5se och h\u00e4ll p\u00e5 saften och resten av det finrivna skalet av citrusfrukterna. Tills\u00e4tt \u00e4ven en skv\u00e4tt god olivolja. F\u00f6rslut p\u00e5sen och se till att v\u00e4nda runt s\u00e5 att alla rotfrukter f\u00e5r marinad p\u00e5 sig. Hit kan du f\u00f6rbereda till och med n\u00e5gon dag i f\u00f6rv\u00e4g. T\u00e4nk p\u00e5 att ta fram rotfrukterna i tid om du t\u00e4nkte anv\u00e4nda dem rumstempererade.
