Den \u00e4r fast och vit i k\u00f6ttet och alldeles delikat<strong> och beh\u00f6ver inte mycket mer \u00e4n en varsam hantering i tillagningen. <\/strong><\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong><strong>H\u00e4r har skreien bakats i ugn till 45 graders innertemperatur och lagts p\u00e5 en b\u00e4dd av finstrimlad f\u00e4nk\u00e5l<\/strong> som br\u00e4serats i sm\u00f6r med schalottenl\u00f6k och lite sherryvin\u00e4ger, kryddat med korianderfr\u00f6n och f\u00e4nk\u00e5lsfr\u00f6n. <strong>Det hela toppas med en oemotst\u00e5ndligt god och fantastiskt l\u00e4ttgjord s\u00e5s p\u00e5 brynt sm\u00f6r med ansjovis (i det h\u00e4r fallet den traditionella svenska) och citron.<\/strong> Dekorera g\u00e4rna med f\u00e4nk\u00e5lsvippor om din f\u00e4nk\u00e5l hade det. Nykokt potatis fungerar fint till f\u00f6r den som s\u00e5 vill. Ringla lite olivolja \u00f6ver fiskbitarna, salta och peppra. St\u00e4ll dem \u00e5t sidan tills det \u00e4r dags att s\u00e4tta in dem i ugnen. Fr\u00e4s schalottenl\u00f6ken p\u00e5 medell\u00e5g v\u00e4rme i sm\u00f6r och olja med lite salt, tills\u00e4tt f\u00e4nk\u00e5len efter ett tag och l\u00e4gg i en klick sm\u00f6r till. Krydda med korianderfr\u00f6n och f\u00e4nk\u00e5lsfr\u00f6n samt salt och peppar. R\u00f6r om d\u00e5 och d\u00e5 och stek f\u00e4nk\u00e5len mjuk. Efter ett tag kan du s\u00e4tta in fisken i ugnen som du satt p\u00e5 cirka 110-150 grader och ber\u00e4kna cirka 15-20 minuter tills de blir klara. Jag k\u00f6r g\u00e4rna fisken till 45 graders innertemperatur n\u00e4r det g\u00e4ller s\u00e5 h\u00e4r fin vit fisk. Tills\u00e4tt sherryvin\u00e4gern till f\u00e4nk\u00e5len, forts\u00e4tt puttra och r\u00f6r om d\u00e5 och d\u00e5. Smaka av och krydda eventuellt upp mer. Sm\u00e4lt sm\u00f6ret i en kastrull p\u00e5 medelh\u00f6g v\u00e4rme, l\u00e4gg i ansjovisen direkt fr\u00e5n burken efter att du h\u00e4llt av spadet n\u00e5got s\u00e5n\u00e4r, l\u00e5t puttra p\u00e5 h\u00f6g v\u00e4rme. Jag anv\u00e4nder g\u00e4rna en visp f\u00f6r att sl\u00e5 s\u00f6nder ansjovisen i sm\u00e5 bitar och se till att allt blandas. Tills\u00e4tt finstrimlad citron och pressa citron. Tag av v\u00e4rmen. L\u00e4gg upp f\u00e4nk\u00e5l, fiskbitarna och skeda ansjovissm\u00f6ret \u00f6ver &#8211; servera direkt!
