H\u00e4r \u00e4r det en fin ytterfil\u00e9 som f\u00e5tt s\u00e4llskap av rostad potatis, mor\u00f6tter och persiljer\u00f6tter och serveras med en mustig s\u00e5s smaksatt med enb\u00e4r, \u00f6rter, viltfond och whisky. Jag gjorde den faktiskt p\u00e5 fond p\u00e5 flaska, \u00e4ven om det sj\u00e4lvklart blir \u00e4nnu godare om man hinner och orkar koka sin fond sj\u00e4lv. Fast den h\u00e4r genv\u00e4gen \u00e4r inte s\u00e5 dum n\u00e4r man med ganska enkla medel vill fixa en riktigt god middag.  Ut\u00f6ver de h\u00e4r godsakerna serverar jag g\u00e4rna en fr\u00e4sch gr\u00f6nsallad till. <\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Man kan sj\u00e4lvklart ta andra delar av hjorten eller \u00e4ven annat (vilt)k\u00f6tt s\u00e5som ren, r\u00e5djur, kalv, biff..<\/p>\n\n\n\n<figure class=\"wp-block-image size-large is-resized\"><img loading=\"lazy\" decoding=\"async\" som f\u00f6rst rostas i torr panna och d\u00e4refter krossas i mortel<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">20 hela korianderfr\u00f6n som ocks\u00e5 rostas i torr panna och krossas i mortel<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">10 torkade enb\u00e4r, rostade och krossade i mortel<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">salt till stekningen av blandning av viltfond och kalv- eller oxfond<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">en skv\u00e4tt vatten till fonden<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">resten av kryddorna du krossade i class=\"wp-block-paragraph\">salt<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">nymald peppar<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\u00f6rtkrydda (timjan, rosmarin och en aning salvia tog jag) <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">en skv\u00e4tt olivolja<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">g\u00e4rna f\u00e4rska \u00f6rter att toppa med vid servering (k\u00f6rvel, persilja, class=\"wp-element-caption\">De rostade rotfrukterna redo att serveras<\/figcaption><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\"><strong><em>G\u00f6r s\u00e5 h\u00e4r: <\/em><\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Koka potatis och rotfrukter i saltat vatten i cirka tio minuter s\u00e5 de mjuknar utan att bli helt f\u00e4rdigkokta. Genom att koka dem s\u00e5h\u00e4r f\u00f6rst suger de upp det goda sm\u00f6ret och blir extra smakrika och l\u00e4tt krispiga n\u00e4r du rostar dem i ugnen sen. L\u00e4gg de avrunna potatisarna och \u00f6vriga rotfrukter i en sk\u00e5l med en rej\u00e4l klick sm\u00f6r och lite olja, tills\u00e4tt \u00f6rtkryddor, salt och peppar och blanda f\u00f6rsiktigt runt s\u00e5 att alla t\u00e4cks av smakerna och fettet. H\u00e4ll upp p\u00e5 en ugnspl\u00e5t. Rosta i 200 graders ugn i cirka 20-30 minuter tills de f\u00e5tt fin f\u00e4rg utan att br\u00e4nnas. Drag ner v\u00e4rmen eller tag ut pl\u00e5ten s\u00e5 l\u00e4nge. Sedan kan de v\u00e4rmas samtidigt som du steker klart k\u00f6ttet p\u00e5 l\u00e5g temperatur i ugnen. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Krydda k\u00f6ttet ordentligt med kryddorna, och sn\u00e5la inte p\u00e5 saltet men t\u00e4nk p\u00e5 att f\u00e4rdig viltkrydda \u00e4ven inneh\u00e5ller salt. Eftersom k\u00f6ttet steks helt och sedan skivas upp blir det \u00e4nd\u00e5 inte s\u00e5 mycket salt, s\u00e5 det \u00e4r utm\u00e4rkt att det f\u00e5r rej\u00e4lt med kryddor runtom. Stek k\u00f6ttet i het panna med olja och en klick sm\u00f6r samt vitl\u00f6ksklyftor i halvor och f\u00e4rsk rosmarin eller timjan. N\u00e4r du v\u00e4nt k\u00f6ttet efter ett kort tag \u00f6ser du det med sm\u00f6ret. Se till att k\u00f6ttet f\u00e5r fin stekyta runtom, lyft sedan upp det och l\u00e4gg det i en ugnsfast form. K\u00f6ttet st\u00e4lls sedan in i ugnen som du ser till h\u00e5ller 90 grader n\u00e4r det \u00e4r cirka 20 minuter kvar till servering. Anv\u00e4nd g\u00e4rna en k\u00f6ttermometer, jag tycker att k\u00f6ttet ska komma upp i 57-59 grader och sedan vila ett tag innan det sk\u00e4rs upp. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Direkt n\u00e4r du stekt k\u00f6ttet drar du ig\u00e5ng s\u00e5sen som egentligen \u00e4r det mest tidskr\u00e4vande i den h\u00e4r r\u00e4ttens tillagning. H\u00e4ll i whiskyn i pannan d\u00e4r k\u00f6ttsafterna \u00e4r, anv\u00e4nd g\u00e4rna en visp f\u00f6r att f\u00e5 loss det som sitter i pannans botten. Tills\u00e4tt kryddor, lagerblad och gr\u00e4dde samt fond. L\u00e5t puttra \u00f6ver medelv\u00e4rme s\u00e5 att den kokar ihop. Smaka av ifall du beh\u00f6ver mer fond, kryddor &#8211; och tills\u00e4tt soja. Smaka av, koka ihop, smaka av, koka ihop &#8211; och du f\u00e5r en riktigt bra s\u00e5s!
