Jag har uppt\u00e4ckt att de p\u00e4ron man hittar i aff\u00e4rerna p\u00e5 senaste tiden tycks ha tappat i smak och blivit v\u00e4ldigt s\u00f6ta. D\u00e5 blir det inte s\u00e5 sp\u00e4nnande smaker i den h\u00e4r pajen som smakbrytningen med det syrliga. Man kan \u00e4ven ta ett gott \u00e4pple med fin syra, dock ej Granny Smith i det h\u00e4r fallet utan mer ett aromatiskt svenskt \u00e4pple av n\u00e5got slag. Kakan serveras som den \u00e4r eller med en klick vispgr\u00e4dde alternativt vaniljglass. L\u00e4gg sm\u00f6ret i en tjockbottnad kastrull, st\u00e4ll den \u00f6ver medelh\u00f6g v\u00e4rme och l\u00e5t den st\u00e5 och f\u00f6rst sm\u00e4lta, sedan puttra. Den kommer att puttra mer och mer och det kan skv\u00e4tta lite \u00f6ver spisen men ha t\u00e5lamod. Skak-snurra f\u00f6rsiktigt kastrullen d\u00e5 och d\u00e5. Efter ett tag k\u00e4nner du ljuvliga sm\u00f6rkolanoter och ser hur bubblorna i sm\u00f6ret bli mindre och mindre samtidigt som sm\u00f6ret f\u00e5r en mer gyllenbrun f\u00e4rg. Sm\u00f6ret ska inte bli br\u00e4nt, tag kastrullen fr\u00e5n v\u00e4rmen och st\u00e4ll det i rumstemperatur att svalna medan du drar ig\u00e5ng vispandet. H\u00e4r beh\u00f6vs en elvisp. B\u00f6rja med att l\u00e4gga \u00e4ggvitorna i en bunke som \u00e4r absolut ren, minsta fett g\u00f6r att \u00e4ggvitorna inte blir till skum. Tills\u00e4tt n\u00e5gra droppar citron och en liten nypa salt. B\u00f6rja vispa p\u00e5 l\u00e5g fart som du snart \u00f6kar. N\u00e4r du f\u00e5tt ett fint skum tills\u00e4tter du sockret lite i taget, s\u00e5 det hinner &#8221;sm\u00e4lta&#8221; och du f\u00e5r en blank fin mar\u00e4ng. St\u00e4ll den \u00e5t sidan och forts\u00e4tt direkt med visparna i den andra sk\u00e5len d\u00e4r du lagt \u00e4ggulor, den andra decilitern socker, mald kardemumma och finrivet citronskal samt vanilj. Vispa \u00e4ggulorna \u00e4ven de f\u00f6rst p\u00e5 l\u00e5gt varvtal som du sedan \u00f6kar. Vispa i n\u00e4rmare tio minuter s\u00e5 du f\u00e5r ett ljusare fluff och sockret &#8221;sm\u00e4lt&#8221; och inte \u00e4r s\u00e5 kornigt. Blanda mj\u00f6l och bakpulver i ett halvliterm\u00e5tt eller en bunke. Nu tar du sm\u00f6ret och silar f\u00f6rsiktigt ner det i \u00e4gguleblandningen, vispa eller blanda f\u00f6rsiktigt (jag g\u00f6r det med elvispen p\u00e5 l\u00e4gsta fart) &#8211; du ska inte anv\u00e4nda precis allt sm\u00f6ret utan l\u00e4mna grumset i botten. V\u00e4nd\/vispa f\u00f6rsiktigt ner \u00e4ggviteskummet och v\u00e4nd\/vispa f\u00f6rsiktigt ner mj\u00f6let med bakpulvret. Blanda f\u00f6rsiktigt s\u00e5 du f\u00e5r en j\u00e4mn smet utan att du f\u00f6rlorar luften. H\u00e4ll smeten i en form som du smort med rikligt med sm\u00f6r och g\u00e4rna br\u00f6at med mandelmj\u00f6l. Skala och ta bort k\u00e4rnhusen ur p\u00e4ronen, skiva dem ganska grovt och pressa citron \u00f6ver dem s\u00e5 de inte oxiderar och blir m\u00f6rka. Tryck ner p\u00e4ronbitarna ordentligt i smeten s\u00e5 att du har ganska t\u00e4tt med p\u00e4ron. Str\u00f6 en sked socker \u00f6ver och eventuellt \u00e4ven lite mandelmj\u00f6l. Baka i ugnen p\u00e5 175 grader i cirka 40 minuter. Kontrollera med en sticka att smeten stelnat s\u00e5 att kakan \u00e4r torr i mitten.
