Dess frukter \u00e4r l\u00e4tt lurv-taggiga med intensivt r\u00f6da fr\u00f6n inuti. Dessa fr\u00f6n mals tillsammans med chili, kryddor, salt, l\u00f6k och vitl\u00f6k till en pasta som man sedan anv\u00e4nder i matlagningen. Ofta blandas achioten med saften fr\u00e5n bittra\/sura apelsiner &#8221;Naranjas agrias&#8221; som har gr\u00f6nt skal och likaledes \u00e4r en specialitet fr\u00e5n Yucat\u00e1n-halv\u00f6n. Denna marinad anv\u00e4nds till kyckling, fisk eller fl\u00e4skk\u00f6tt och utg\u00f6r grunden f\u00f6r den ber\u00f6mda cochinita pibil, som \u00e4r ett speciellt fl\u00e4skk\u00f6tt som \u00e4ts p\u00e5 Yucatan i tortillas, som tacos. <\/p>\n\n\n\n<p>Om du har turen att f\u00e5 tag p\u00e5 achiote kan jag varmt rekommendera att g\u00f6ra en marinad och tillaga kyckling, fisk eller fl\u00e4sk i denna h\u00e4rligt aromatiska och f\u00e4rggranna marinad. Servera med ris och kanske tortillas samt valfria gr\u00f6nsaker.
