Under tiden kan du rosta vitpepparn i en torr stekpanna p\u00e5 mellanh\u00f6g v\u00e4rme tills du k\u00e4nner att den b\u00f6rjar dofta gott och aromatiskt. St\u00e4ll att svalna och krossa den sedan i en mortel s\u00e5 att den blir ganska fint mald. Tills\u00e4tt vinet, h\u00f6j v\u00e4rmen och l\u00e5t puttra tills du har kokat ihop. Tills\u00e4tt gr\u00e4dden och fonden, l\u00e5t forts\u00e4tta puttra ihop s\u00e5 att s\u00e5sen till slut tjocknar, r\u00f6r med visp d\u00e5 och d\u00e5. Tills\u00e4tt \u00e4ven peppar och mot slutet \u00e4ven sojas\u00e5sen, smaka av &#8211; kanske mer peppar? mer soja f\u00f6r s\u00e4lta, fyllighet och umami? Man kan \u00e4ven droppa i n\u00e5gon droppe citron f\u00f6r extra fin smak tycker jag, det balanserar s\u00e4ltan och smakerna fint.
