Denna ljuvliga kompott l\u00e4ggs i knyten av filodeg p\u00e5 en botten av riven mandelmassa f\u00f6r att sedan gr\u00e4ddas i ugnen s\u00e5 de \u00e4r frasiga p\u00e5 utsidan. N\u00e4sta g\u00e5ng ska jag testa hur det blir att l\u00e4gga de penslade lagren filodeg i muffinsformar och fylla med  \u00e4ppelkompotten f\u00f6rst och mandelmassan ovanp\u00e5, gr\u00e4dda och g\u00f6ra locken l\u00f6st i rundlar som l\u00e4ggs p\u00e5 efter gr\u00e4ddning. Men de h\u00e4r sm\u00e5 raringarna till knyten blev inte s\u00e5 dumma. <\/figcaption><\/figure>\n\n\n\n<p><strong><em>Du beh\u00f6ver f\u00f6r 6 personer: <\/em><\/strong><\/p>\n\n\n\n<p>5 \u00e4pplen med god smak, ganska fasta och syrliga<\/p>\n\n\n\n<p>1 kryddm\u00e5tt \u00e4kta vanilj (finns att k\u00f6pa p\u00e5 burk &#8211; eller ta urkr\u00e5met ur 1\/2 vaniljst\u00e5ng, resten av vaniljst\u00e5ngen kan du anv\u00e4nda n\u00e4sta g\u00e5ng du g\u00f6r vaniljkr\u00e4m eller annan efterr\u00e4tt)<\/p>\n\n\n\n<p>1-2 msk socker, g\u00e4rna r\u00e5socker (ta mindre m\u00e4ngd f\u00f6rst och smaka av &#8211; kompotten ska vara syrlig!)<\/p>\n\n\n\n<p>1 msk sm\u00f6r<\/p>\n\n\n\n<p>2-3 tsk calvados (kan uteslutas &#8211; d\u00e5 kan du ta n\u00e5gra droppar citron)<\/p>\n\n\n\n<p>150 gram mandelmassa, grovriven<\/p>\n\n\n\n<p>1 paket filodeg av god kvalitet<\/p>\n\n\n\n<p>75 gram sm\u00e4lt sm\u00f6r att pensla filodegen med<\/p>\n\n\n\n<p>r\u00e5socker att str\u00f6 \u00f6ver knytena<\/p>\n\n\n\n<p>mald kanel att str\u00f6 \u00f6ver knytena<\/p>\n\n\n\n<p>mald kardemumma eller \u00e4nnu hellre nymald kardemumma att str\u00f6 \u00f6ver knytena<\/p>\n\n\n\n<p>l\u00f6svispad gr\u00e4dde till serveringen, eventuellt smaksatt med calvados eller kanel<\/p>\n\n\n\n<figure class=\"wp-block-image size-large is-resized\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/files.katinkaskitchen.com\/IMG_2607-1024x768.jpeg\" alt=\"\" class=\"wp-image-34930\" style=\"width:512px;height:384px\" width=\"512\" height=\"384\" srcset=\"https:\/\/files.katinkaskitchen.com\/IMG_2607-1024x768.jpeg 1024w, https:\/\/files.katinkaskitchen.com\/IMG_2607-300x225.jpeg 300w, https:\/\/files.katinkaskitchen.com\/IMG_2607-150x113.jpeg 150w, https:\/\/files.katinkaskitchen.com\/IMG_2607-768x576.jpeg 768w, https:\/\/files.katinkaskitchen.com\/IMG_2607-1536x1152.jpeg 1536w, https:\/\/files.katinkaskitchen.com\/IMG_2607-2048x1536.jpeg 2048w\" sizes=\"auto, (max-width: 512px) 100vw, 512px\" \/><figcaption class=\"wp-element-caption\">Fyra lager filodeg blev bra tycker jag, men man kan ha fler om man vill. <\/figcaption><\/figure>\n\n\n\n<p><strong><em>G\u00f6r s\u00e5 h\u00e4r:<\/em><\/strong><\/p>\n\n\n\n<p>Skala och k\u00e4rna ur \u00e4pplena, t\u00e4rna dem och l\u00e4gg t\u00e4rningarna i en kastrull tillsammans med sm\u00f6r, vanilj, och calvados eller citron. L\u00e5t sjuda upp och l\u00e5t sjuda bara n\u00e5gra minuter s\u00e5 att det blir en kompott och sockret har l\u00f6st sig, r\u00f6r om d\u00e5 och d\u00e5 s\u00e5 kompotten inte br\u00e4nns. St\u00e4ll kompotten \u00e5t sidan s\u00e5 l\u00e4nge. Ta \u00e4ven fram socker, kanel och kardemumma. Jag har alltid en pepparkvarn bara f\u00f6r kardemumma, fylld med de sm\u00e5 inre k\u00e4rnorna av kardemumman &#8211; det blir underbart n\u00e4r kardemumman \u00e4r alldeles nymald. Sk\u00e4r filodegen i lagom stora rutor f\u00f6r varje portion &#8211; degen ska r\u00e4cka att n\u00e5 runt hela paketet. L\u00e4gg p\u00e5 ett lager riven mandelmassa i mitten p\u00e5 varje ruta. Toppa med en klick \u00e4ppelkompott. Vik ihop degen till ett fint knyte och se till att kanterna \u00e4r ordentligt f\u00f6rslutna eller ligger under knytet s\u00e5 de inte riskerar att g\u00e5 upp. Eller s\u00e5 viker man i trekanter eller har kanterna upp\u00e5t men n\u00e5got s\u00e5n\u00e4r f\u00f6rseglade med hj\u00e4lp av det penslade sm\u00f6ret. Pensla med sm\u00e4lt sm\u00f6r runt hela knytena! Str\u00f6 lite socker \u00f6ver, ocks\u00e5 runt hela f\u00f6r att f\u00e5 det h\u00e4rliga kristet, samt mald kardemumma och kanel. L\u00e4gg knytena p\u00e5 en pl\u00e5t med bakpl\u00e5tspapper. Hit kan du f\u00f6rbereda till innan middagen. Gr\u00e4dda knytena i 200 grader tills de f\u00e5tt fin f\u00e4rg och blivit frasiga.
