H\u00e4r har jag tillagat scampi eller tigerr\u00e4kor i s\u00e5sen, men den passar lika bra med kyckling. Servera n\u00e5gra h\u00e4rliga kokta gr\u00f6nsaker till s\u00e5som gr\u00f6na b\u00f6nor, haricots verts, broccoli eller en gr\u00f6n sallad. Tills\u00e4tt ingef\u00e4ran, chilin och kokosmj\u00f6lken samt buljong. L\u00e5t puttra ihop. H\u00e4ll i mangon. L\u00e5t s\u00e5sen puttra s\u00e5 att den tjocknar och smakerna kommer till sin r\u00e4tt. Mixa s\u00e5sen i en mixer och h\u00e4ll tillbaka i grytan. Tills\u00e4tt limejuicen. Smaka nu av ifall du vill ha mer hetta, syra, s\u00e4lta..? Den ska vara balanserad, fyllig och smakrik med s\u00e5v\u00e4l hetta, syra som s\u00e4lta i fin harmoni. Hit kan du f\u00f6rbereda s\u00e5sen. Strax innan servering, n\u00e4r ditt ris \u00e4r f\u00e4rdigkokta och du f\u00f6rberett gr\u00f6nsakerna till, l\u00e4gger du i scampi eller tigerr\u00e4kor alternativt vanliga skalade r\u00e4kor och l\u00e5ter de precis v\u00e4rmas upp ifall de redan \u00e4r kokta. Anv\u00e4nder du r\u00e5a r\u00e4kor som jag ofta v\u00e4ljer l\u00e5ter du dem sjuda i s\u00e5sen tills de precis kokats igenom och blivit rosa, inte l\u00e4ngre f\u00f6r d\u00e5 blir de sega!
