Papardelle \u00e4r en bred sorts tagliatelle som passar s\u00e4rskilt bra f\u00f6r att f\u00e5nga upp den goda ragun. Servera eventuellt med riven parmesanost och en sallad bredvid. Tills\u00e4tt k\u00f6ttet och h\u00f6j temperaturen, l\u00e5t k\u00f6ttet steka runtom. Tills\u00e4tt tomatpur\u00e9n och l\u00e5t den fr\u00e4sa ett tag i fett s\u00e5 att smakerna frig\u00f6rs. Tills\u00e4tt sedan r\u00f6dvinet och l\u00e5t puttra ihop en aning innan du tills\u00e4tter tomaterna och buljong\/fond. L\u00e4gg \u00e4ven i \u00f6rtkryddorna. L\u00e5t ragun puttra p\u00e5 nu i minst 2-3 timmar p\u00e5 l\u00e5g v\u00e4rme. Man kan st\u00e4lla in grytan i ugnen med ett lock som t\u00e5l att vara i ugnen. L\u00e4mplig ugnstemperatur kan vara dryga 100 grader. K\u00f6ttet ska falla av benen, s\u00e5sen ska m\u00f6rkna och bli rej\u00e4lt mustig. Lyft ur benen, se till att k\u00f6ttet \u00e4r finf\u00f6rdelat i strimlor, ta bort slamsiga delar s\u00e5 du bara har fint m\u00f6rt k\u00f6tt kvar. L\u00e5t s\u00e5sen puttra ihop lite mer om den verkar f\u00f6r l\u00f6s och soppig. Den ska vara n\u00e4stan klibbig i konsistensen s\u00e5 att den fastnar fint p\u00e5 pastan.
