Det kan l\u00e5ta underligt men \u00e4r magiskt gott! Man kan \u00e4ven servera citronsorbeten utan \u00e4ppelt\u00e4rningarna. Den h\u00e4r g\u00e5ngen har jag valt att g\u00f6ra sorbeten med en aning mascarpone i f\u00f6r att f\u00e5 den extra kr\u00e4mig och rund i smaken. V\u00e4lj fina mogna saftiga citroner. <\/strong><\/p>\n\n\n\n<p><strong><em>Du beh\u00f6ver f\u00f6r ca 6 personer: <\/em><\/strong><\/p>\n\n\n\n<p>1 1\/2 dl socker <\/p>\n\n\n\n<p>1 1\/2 dl vatten<\/p>\n\n\n\n<p>2 dl f\u00e4rskpressad citronjuice<\/p>\n\n\n\n<p>1\/2 dl glykos<\/p>\n\n\n\n<p>2-3 msk mascarpone<\/p>\n\n\n\n<p>det finrivna skalet av 1\/2 &#8211; 1 citron, v\u00e4l tv\u00e4ttad<\/p>\n\n\n\n<p><em>Till servering:<\/em><\/p>\n\n\n\n<p>1-2 \u00e4pplen av ganska fast och syrlig sort, t.ex. Granny Smith, Pink Lady eller helt enkelt ett \u00e4pple du tycker \u00e4r gott<\/p>\n\n\n\n<p>n\u00e5gra blad f\u00e4rsk basilika, f\u00e4rsk citronmeliss och f\u00e4rsk mynta, finstrimlade<\/p>\n\n\n\n<p>olivolja av god kvalitet med mild smak<\/p>\n\n\n\n<p>lite flingsalt att smula \u00f6ver vid servering<\/p>\n\n\n\n<p><strong><em>G\u00f6r s\u00e5 h\u00e4r: <\/em><\/strong><\/p>\n\n\n\n<p>Koka upp sockerlagen, tills\u00e4tt glykosen p\u00e5 slutet. Tills\u00e4tt \u00e4ven det finrivna citronskalet. L\u00e5t svalna. Blanda med mascarponen och citronjuicen, r\u00f6r ordentligt s\u00e5 att alla klumpar i mascarponen f\u00f6rsvinner. Pressa g\u00e4rna det hela genom en finmaskig sil. St\u00e4ll kallt tills det \u00e4r dags att k\u00f6ra blandningen i glassmaskin. <\/p>\n\n\n\n<p>Medan glassen k\u00f6rs skalar och t\u00e4rnar du \u00e4pplet ganska fint, i ca 4-5 mm stora t\u00e4rningar. Droppa n\u00e5gra droppar citronsaft \u00f6ver s\u00e5 att \u00e4ppelbitarna inte oxiderar och m\u00f6rknar. Blanda \u00e4ppelt\u00e4rningarna med finhackade \u00f6rter. L\u00e4gg upp i botten p\u00e5 v\u00e4l kylda couper, sk\u00e5lar eller glas. L\u00e4gg p\u00e5 en kula citronsorbet, droppa olivolja \u00f6ver och toppa med flingsalt.
