Du bara m\u00e5ste pr\u00f6va denna efterr\u00e4tt! Inspirationen fick jag p\u00e5 en restaurang p\u00e5 Mallorca f\u00f6r m\u00e5nga \u00e5r sedan. Citronsorbeten, gjord med en aning mascarpone f\u00f6r extra kr\u00e4mighet och fin smak vilar p\u00e5 en b\u00e4dd av \u00e4ppelt\u00e4rningar med f\u00e4rska \u00f6rter. B\u00e4st blir \u00e4pplena n\u00e4r de f\u00e5r smak av citronverbena, men det \u00e4r notoriskt sv\u00e5rt att f\u00e5 tag p\u00e5 s\u00e5 jag brukar smaks\u00e4tta med en blandning av basilika, citronmeliss och en aning mynta. Det hela toppas med en riktigt mild god olivolja och flingsalt! Smakmagi uppst\u00e5r och det blir n\u00e4stan som kola-karamelllig smak! Tills\u00e4tt glykosen p\u00e5 slutet och l\u00e5t precis koka upp. Tag av v\u00e4rmen och st\u00e4ll att svalna. <\/p>\n\n\n\n<p>Pressa citronerna, blanda lite av citronjuicen med mascarponen och vispa ihop s\u00e5 att mascarponen l\u00f6ser sig, tills\u00e4tt resten av citronjuicen och den avsvalnade sockerlagen. K\u00f6r blandningen genom en sil f\u00f6r att bli av med klumpar fr\u00e5n mascarponen. St\u00e4ll blandningen kallt i kylen tills det \u00e4r dags att k\u00f6ra den i glassmaskinen. Jag g\u00f6r g\u00e4rna iordning sorbeten tidigare p\u00e5 dagen innan den ska serveras eller dagen innan,s\u00e5 att den blir riktigt kall och l\u00e4ttare att forma kulor av. <\/p>\n\n\n\n<p>Inf\u00f6r servering skalar du och k\u00e4rnar ur \u00e4pplena, sk\u00e4r dem i fina t\u00e4rningar som du l\u00e4gger i en sk\u00e5l. Droppa lite citronsaft \u00f6ver och blanda runt s\u00e5 \u00e4pplet inte oxideras och blir m\u00f6rkt. Hacka \u00f6rterna och blanda i dem. Detta kan du ocks\u00e5 f\u00f6rbereda innan g\u00e4sterna kommer, men se d\u00e5 till att f\u00f6rvara \u00e4ppelt\u00e4rningarna under lock och g\u00e4rna svalt. <\/p>\n\n\n\n<p>L\u00e4gg en sked \u00e4ppelt\u00e4rningar i botten p\u00e5 ett glas, coupe eller sk\u00e5l som du valt att servera i. L\u00e4gg p\u00e5 en kula citronsorbet, ringla olivolja \u00f6ver och toppa med en nypa flingsalt.
