Inspirationen kommer fr\u00e5n ett underbart magiskt hotell i Mexico som heter Las Ma\u00f1anitas. Det har funnit sedan 50-talet och \u00e4r fortsatt legendariskt f\u00f6r sin enorma tr\u00e4dg\u00e5rd d\u00e4r p\u00e5f\u00e5glar spankulerar omkring, lugnet och den goda maten. M\u00e5nga stannar f\u00f6r att \u00e4ta p\u00e5 v\u00e4g mot n\u00e5got resm\u00e5l, vi stannade och \u00e5t frukost p\u00e5 v\u00e4g fr\u00e5n Mexico City till Acapulco en g\u00e5ng. Vi var \u00e4ven n\u00f6jda g\u00e4ster p\u00e5 hotellet vid flera tillf\u00e4llen, bland annat n\u00e4r vi firade dotterns 25-\u00e5rsdag. S\u00e5sen best\u00e5r av sm\u00f6r, lime och cajunkryddor. Servera g\u00e4rna med rostad paprika i strimlor, finns ibland \u00e4ven att k\u00f6pa p\u00e5 burk och passar bra h\u00e4r. Servera g\u00e4rna med mer kokta gr\u00f6nsaker som broccoli eller b\u00f6nor och kanske en fr\u00e4sch gr\u00f6nsallad. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong><em>Du beh\u00f6ver f\u00f6r ca 4 personer: <\/em><\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Kycklingbr\u00f6st, kycklingl\u00e5rfil\u00e9 eller hel grillad kyckling<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">mor\u00f6tter kokta i bitar, stavar eller hela<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">100 gram sm\u00f6r<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1-2 gula l\u00f6kar, skalad och finstrimlad<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1 1\/2 dl f\u00e4rskpressad limejuice<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em>3 tsk cajunkryddblandning best\u00e5ende av:<\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">paprikapulver av god kvalitet, g\u00e4rna spanskt r\u00f6kt paprikapulver (finns att k\u00f6pa p\u00e5 delikatessaff\u00e4rer)<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">cayennepulver <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Espelettepulver (en mycket god aromatisk och ganska mild chilisort fr\u00e5n franska delen av Baskien)<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">havssalt eller himalayasalt<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">torkad oregano<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">torkad timjan (man kan ist\u00e4llet f\u00f6r de tv\u00e5 \u00f6rterna v\u00e4lja italiensk kryddblandning)<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">nymald svartpeppar<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">rostad vitpeppar som krossats i mortel (ta annars mald vitpeppar men d\u00e5 lite mindre m\u00e4ngd)<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">vitl\u00f6kspulver alternativt krossad f\u00e4rsk vitl\u00f6k efter smak<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">l\u00f6kpulver<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong><em>G\u00f6r s\u00e5 h\u00e4r: <\/em><\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Blanda cajunkryddblandningen i en sk\u00e5l och spara det som du inte anv\u00e4nder h\u00e4r. L\u00e5t den strimlade l\u00f6ken puttra i sm\u00f6ret \u00f6ver medell\u00e5g v\u00e4rme s\u00e5 att l\u00f6ken blir helt mjukkokt och glansig utan att ta f\u00e4rg. Tills\u00e4tt limejuicen och cajunkryddorna. Smaka av ifall du vill ha mer kryddor, mer hetta, mer syra fr\u00e5n lime? S\u00e5sen \u00e4r nu klar och kan st\u00e4llas \u00e5t sidan tills det \u00e4r dags att servera. L\u00e4gg laxbitarna i en smord ugnsform och h\u00e4ll lite kryddblandning \u00f6ver dem, droppa \u00e4ven lite olivolja eller annan god olja \u00f6ver dem och baka laxbitarna i ugnen i ca 15 minuter tills de \u00e4r s\u00e5 genomstekta som du vill ha dem, jag gillar n\u00e4r de fortfarande har aningens n\u00e4stan r\u00e5 k\u00e4rna \u00e0 la sashimi medan sonen vill ha sin lax helt genomstekt. Koka under tiden de gr\u00f6nsaker du vill servera till. L\u00e4gg upp fisk med gr\u00f6nsaker och eventuellt ris eller potatis f\u00f6r den hungrige, och kanske med strimlor av rostad skalad paprika.
