Jag toppar de g\u00e4rna med lite florsocker blandat med guldpulver, men man kan ta bara florsocker eller bara guldpulver &#8211; eller inget alls! <\/figcaption><\/figure>\n\n\n\n<p><strong>Det h\u00e4r \u00e4r en magisk chokladsuffl\u00e9 fr\u00e5n en av krogarna i v\u00e5ra kvarter i Paris. Den \u00e4r obegripligt god. F\u00f6rsta g\u00e5ngen var det maken som best\u00e4llde en portion och n\u00e4r jag smakade ville jag inte l\u00e4mna den ifr\u00e5n mig. Det tog n\u00e5gra g\u00e5nger &#8211; och att den unge kocken fick ett gott \u00f6ga till min dotter &#8211; innan jag h\u00f6gtidligt fick receptet. Kocken heter Julien Guilloret och restaurangen heter l&#8217;Affable, i sjunde arrondisemanget. Sockerlagen ska n\u00e5 en temperatur p\u00e5 114 grader. Tag kastrullen av v\u00e4rmen och vispa \u00e4ggvitorna, b\u00f6rja vispa p\u00e5 l\u00e4gre fart och \u00f6ka farten, tills\u00e4tt sockerlagen i en f\u00f6rsiktig str\u00e5le och vispa tills mar\u00e4ngen svalnat och \u00e4r helt glansig, tjock och kr\u00e4mig. V\u00e4nd f\u00f6rsiktigt ner den sm\u00e4lta chokladen med en slickepott s\u00e5 att s\u00e5 mycket av luften beh\u00e5lls i mar\u00e4ngen. H\u00e4ll eller spritsa smeten i suffl\u00e9formar som du smort med sm\u00f6r och haft i socker i. Hit kan du f\u00f6rbereda. <\/p>\n\n\n\n<p>N\u00e4r det \u00e4r dags att servera suffl\u00e9erna st\u00e4ller du in dem i ugnen p\u00e5 180 grader i varmluftsugn och gr\u00e4ddar dem i ca 8-10 minuter, titta till dem d\u00e5 och d\u00e5 men utan att \u00f6ppna ugnsluckan s\u00e5 de inte sjunker ihop, och passa noga mot slutet &#8211; de f\u00e5r inte bli br\u00e4nda! N\u00e4r de h\u00f6jt sig riktigt fint och ser gr\u00e4ddade ut &#8211; utan att bli br\u00e4nda &#8211; \u00e4r de klara.
