Jag f\u00f6rberedde h\u00f6greven kv\u00e4llen innan s\u00e5 gick det riktigt fort att f\u00e5 till middagen p\u00e5f\u00f6ljande dag. H\u00f6grev kan man ofta finna till riktigt bra pris och den klarar sig sj\u00e4lv i en gryta eller i ugnen under l\u00e5\u00e5\u00e5\u00e5ng tid &#8211; resultatet blir f\u00f6rf\u00f6riskt gott! <\/strong><\/p>\n\n\n\n<p class=\"has-medium-font-size wp-block-paragraph\"><strong>Cochinita pibil \u00e4r en r\u00e4tt p\u00e5 fl\u00e4sk med ursprung fr\u00e5n Yucatanhalv\u00f6n. Cochinita betyder liten gris och pibil kommer fr\u00e5n ett maya-ord som syftar p\u00e5 att den bakas under jord med hett kol. Den g\u00f6rs med en speciell ingrediens typ en kryddblandning aning i form av en  pasta som heter achiote som best\u00e5r av bland annat annatto, ett speciellt b\u00e4r om ger intensivt r\u00f6d f\u00e4rg och som kommer fr\u00e5n ett tropiskt tr\u00e4d. Man kan k\u00f6pa achiote f\u00e4rdig via n\u00e4tet eller som jag sl\u00e4pa hem den fr\u00e5n Mexico, faktiskt fr\u00e5n Yucatanhalv\u00f6n. Om du inte f\u00e5r tag p\u00e5 achiote kan du laga r\u00e4tten utan den. <\/strong><\/p>\n\n\n\n<p class=\"has-medium-font-size wp-block-paragraph\"><strong>Marinaden inneh\u00e5ller \u00e4ven en surapelsin typisk f\u00f6r Yucatan. Jag blandar lime och apelsin f\u00f6r att uppn\u00e5 liknande resultat och tills\u00e4tter \u00e4ven lite finrivet skal av apelsinen. R\u00e4tten serveras med majstortillas och en salsa p\u00e5 habanero och vin\u00e4ger. H\u00e4r serverade vi med en chipotle-salsa och guacamole bredvid. <\/strong><\/p>\n\n\n\n<p class=\"has-medium-font-size wp-block-paragraph\"><strong>F\u00f6r mer inspiration rekommenderas g\u00e5rdagens inl\u00e4gg med en m\u00e4ngd tacos i olika tappningar som vi nj\u00f6t i Mexico! <\/strong><\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"768\" height=\"1024\" src=\"https:\/\/files.katinkaskitchen.com\/IMG_0645-1-768x1024.jpeg\" alt=\"\" class=\"wp-image-36665\" srcset=\"https:\/\/files.katinkaskitchen.com\/IMG_0645-1-768x1024.jpeg 768w, https:\/\/files.katinkaskitchen.com\/IMG_0645-1-225x300.jpeg 225w, https:\/\/files.katinkaskitchen.com\/IMG_0645-1-113x150.jpeg 113w, https:\/\/files.katinkaskitchen.com\/IMG_0645-1-1152x1536.jpeg 1152w, https:\/\/files.katinkaskitchen.com\/IMG_0645-1-1536x2048.jpeg 1536w, https:\/\/files.katinkaskitchen.com\/IMG_0645-1-750x1000.jpeg 750w, https:\/\/files.katinkaskitchen.com\/IMG_0645-1-scaled.jpeg 1920w\" sizes=\"auto, (max-width: 768px) 100vw, 768px\" \/><figcaption class=\"wp-element-caption\">K\u00f6ttet blir otroligt saftigt och gott!<\/figcaption><\/figure>\n\n\n\n<p class=\"has-medium-font-size wp-block-paragraph\"><strong><em>Du beh\u00f6ver f\u00f6r 4-6 personer:<\/em><\/strong> <\/p>\n\n\n\n<p class=\"has-medium-font-size wp-block-paragraph\">En bit h\u00f6grev p\u00e5 \u00e5tminstone 600-800 gram (det var strykande \u00e5tg\u00e5ng n\u00e4r jag bj\u00f6d ungdomarna p\u00e5 detta)<\/p>\n\n\n\n<p class=\"has-medium-font-size wp-block-paragraph\">ca 1-2 msk achiote (den kan vara ganska h\u00e5rd, jag river den p\u00e5 ett rivj\u00e4rn och blandar sedan med citrussaften s\u00e5 l\u00f6ser den upp s\u00e4g sn\u00e4llt)<\/p>\n\n\n\n<p class=\"has-medium-font-size wp-block-paragraph\">saften och det finrivna skalet av 1 apelsin<\/p>\n\n\n\n<p class=\"has-medium-font-size wp-block-paragraph\">1-2 pressade limefrukter<\/p>\n\n\n\n<p class=\"has-medium-font-size wp-block-paragraph\">1-2 kryddm\u00e5tt chilipulver<\/p>\n\n\n\n<p class=\"has-medium-font-size wp-block-paragraph\">g\u00e4rna lite chipotle &#8211; i torkad mald form eller \u00e4nnu hellre inlagd, som du finhackar<\/p>\n\n\n\n<p class=\"has-medium-font-size wp-block-paragraph\">1\/2 tsk malda korianderfr\u00f6n<\/p>\n\n\n\n<p class=\"has-medium-font-size wp-block-paragraph\">1\/2 tsk mald spiskummin<\/p>\n\n\n\n<p class=\"has-medium-font-size wp-block-paragraph\">1\/4 tsk torkad oregano (anv\u00e4nds faktiskt f\u00f6rv\u00e5nansv\u00e4rt ofta i det mexikanska k\u00f6ket)<\/p>\n\n\n\n<p class=\"has-medium-font-size wp-block-paragraph\">1 tsk salt<\/p>\n\n\n\n<p class=\"has-medium-font-size wp-block-paragraph\">2 gula l\u00f6kar, skalade och skurna i tunna klyftor\/strimlor<\/p>\n\n\n\n<p class=\"has-medium-font-size wp-block-paragraph\">Tortillas (man kan ta vetetortillas som \u00e4r l\u00e4ttare att f\u00e5 tag p\u00e5 h\u00e4r i Sverige)<\/p>\n\n\n\n<p class=\"has-medium-font-size wp-block-paragraph\">Sallad, koriander och salsa till servering<\/p>\n\n\n\n<p class=\"has-medium-font-size wp-block-paragraph\"><strong><em>G\u00f6r s\u00e5 h\u00e4r: <\/em><\/strong><\/p>\n\n\n\n<p class=\"has-medium-font-size wp-block-paragraph\">Blanda ihop ingredienserna till marinaden. Torka av k\u00f6ttet och l\u00e4gg det i en smord ugnsfast form. H\u00e4ll \u00f6ver marinaden, gnid in k\u00f6ttet med den. L\u00e4gg i den klyftade l\u00f6ken runtom k\u00f6ttet. T\u00e4ck formen med folie och st\u00e4ll in i ugnen p\u00e5 ca 125-130 grader. L\u00e5t den st\u00e5 i 4-6 timmar &#8211; k\u00f6ttet ska vara s\u00e5 genombakat att det g\u00e5r att dela p\u00e5 mycket l\u00e4tt med gaffel och faller is\u00e4r. Hit kan du som sagt f\u00f6rbereda, st\u00e4ll k\u00f6ttet kallt s\u00e5 l\u00e4nge. N\u00e4sta dag (eller om du vill servera direkt) v\u00e4rmer du upp k\u00f6ttet i ugnen, drar is\u00e4r det med tv\u00e5 gafflar och l\u00e5ter det gosa runt i marinaden, blanda allt ihop med l\u00f6ken. St\u00e4ll fram tillsammans med tillbeh\u00f6ren och l\u00e5t g\u00e4sterna g\u00f6ra sina tacos.
