Men varje Nonna i Italien har antagligen sitt eget recept p\u00e5 hur en riktigt god italiensk tomats\u00e5s ska lagas. Det h\u00e4r \u00e4r min variant p\u00e5 en \u00e4ktitaliensk fyllig tomats\u00e5s som sj\u00e4lvklart kan serveras med pasta men \u00e4ven med kyckling, fisk eller gr\u00f6nsaker. Den kan \u00e4ven sp\u00e4das med en aning vatten eller buljong till en delikat tomatsoppa. Det viktiga h\u00e4r \u00e4r att v\u00e4lja smakrika fina tomater. Detta tar ett tag, r\u00f6r om d\u00e5 och d\u00e5 och sk\u00e4r under tiden upp dina tomater. H\u00e4ll i dem samtidigt som du h\u00f6jer v\u00e4rmen, tills\u00e4tt salt, peppar och socker. L\u00e5t sjuda ganska h\u00e4ftigt. Tomaterna ska koka s\u00f6nder, r\u00f6r om d\u00e5 och d\u00e5. L\u00e5t puttra vidare s\u00e5 det b\u00f6rjar puttra ihop och smakerna s\u00e4tter sig och intensifieras. Smaka av ifall du beh\u00f6ver mer salt och socker. Mixa med en stavmixer aller h\u00e4ll i en h\u00f6g mixer och mixa sl\u00e4tt. H\u00e4ll tillbaka i kastrullen.
