L\u00e4gg rabarbern i en tjockbottnad kastrull, h\u00e4ll p\u00e5 lite vatten och sockret. L\u00e5t sjuda upp \u00f6ver medelh\u00f6g v\u00e4rme, r\u00f6r om d\u00e5 och d\u00e5. L\u00e5t rabarbern sm\u00e4lta ner och koka ihop s\u00e5 att alla bitar \u00e4r mjuka. Tills\u00e4tt glykosen p\u00e5 slutet. Smaka av s\u00e5 att den inte \u00e4r f\u00f6r syrlig och t\u00e4nk d\u00e5 p\u00e5 att den blir mer syrlig n\u00e4r den kallnar och \u00e4n mer syrlig d\u00e4r den fryses till sorbet. Samtidigt ska den vara syrlig och kontrastera en aning mot mar\u00e4ngerna och gr\u00e4dden. St\u00e4ll rabarbern att svalna. Mixa den sedan ordentligt s\u00e5 att den \u00e4r helt sl\u00e4t. St\u00e4ll \u00e5t sidan, g\u00e4rna i kylen, tills det \u00e4r dags att k\u00f6ra den i glassmaskin. <\/p>\n\n\n\n<p class=\"has-medium-font-size wp-block-paragraph\">Denna g\u00e5ng pr\u00f6vade jag tipset jag l\u00e4st mig till om att glassen blir kr\u00e4migare och mindre isig om man gnider in bunken som glassen g\u00f6rs i med sprit. Vi tog vodka som f\u00f6rvarats i frysen, det beh\u00f6vdes bara lite p\u00e5 ett hush\u00e5llspapper. Och det hj\u00e4lpte faktiskt! Faktum \u00e4r att bunken fortsatte att h\u00e5lla kylan oerh\u00f6rt mycket b\u00e4ttre \u00e4ven efter att sorbeten var klar och bunken lyfts ur maskinen, s\u00e5 jag kommer anv\u00e4nda det h\u00e4r tricket fram\u00f6ver. Spriten kommer ju inte i glassen utan \u00e4r p\u00e5 utsidan f\u00f6r att kylan ska h\u00e5llas. Testa! <\/p>\n\n\n\n<p class=\"has-medium-font-size wp-block-paragraph\">L\u00e4gg \u00f6ver den f\u00e4rdiga sorbeten i helt ren plastbunke med lock och direkt in i frysen. Tag fram den ett litet tag f\u00f6re servering s\u00e5 att du kan skopa upp den. <\/p>\n\n\n\n<p class=\"has-medium-font-size wp-block-paragraph\"><em>Vid servering: <\/em>L\u00e4gg en kula sorbet i varje coupe, toppa med l\u00f6svispad gr\u00e4dde smaksatt med en aning socker och nymald kardemumma. Toppa med mar\u00e4nger och pens\u00e9er eller andra \u00e4tbara blommor om du har.
