Rosta g\u00e4rna en st\u00f6rre m\u00e4ngd mandelmassa p\u00e5 en g\u00e5ng, den brukar ha en strykande \u00e5tg\u00e5ng. Det h\u00e4r \u00e4r den enda sorbet som jag skulle komma p\u00e5 tanken att servera gr\u00e4dde till, men faktum \u00e4r att det passar v\u00e4ldigt bra med den lena l\u00f6svispade gr\u00e4dden full av h\u00e4rlig kardemummasmak till den lena syrliga sorbeten. Vid servering dekorerar jag g\u00e4rna med \u00e4tbara blommor f\u00f6r extra v\u00e5rsommark\u00e4nsla. <\/strong><\/p>\n\n\n\n<p class=\"has-medium-font-size\"><strong>Sorbeten blir ibland v\u00e5rgr\u00f6n och ibland delikat rosa, beroende p\u00e5 rabarberns f\u00e4rg. N\u00e4r skalen \u00e4r vackert rosar\u00f6da kan man l\u00e4gga med n\u00e5gra skalremsor i kompottkoket f\u00f6r att ge f\u00e4rg, som sedan lyfts upp. <\/strong><\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"768\" height=\"1024\" src=\"https:\/\/files.katinkaskitchen.com\/IMG_1462-1-768x1024.jpeg\" alt=\"\" class=\"wp-image-37173\" srcset=\"https:\/\/files.katinkaskitchen.com\/IMG_1462-1-768x1024.jpeg 768w, https:\/\/files.katinkaskitchen.com\/IMG_1462-1-225x300.jpeg 225w, https:\/\/files.katinkaskitchen.com\/IMG_1462-1-113x150.jpeg 113w, https:\/\/files.katinkaskitchen.com\/IMG_1462-1-1152x1536.jpeg 1152w, https:\/\/files.katinkaskitchen.com\/IMG_1462-1-1536x2048.jpeg 1536w, https:\/\/files.katinkaskitchen.com\/IMG_1462-1-750x1000.jpeg 750w, https:\/\/files.katinkaskitchen.com\/IMG_1462-1-scaled.jpeg 1920w\" sizes=\"auto, (max-width: 768px) 100vw, 768px\" \/><\/figure>\n\n\n\n<p class=\"has-medium-font-size\"><strong><em>Du beh\u00f6ver till ca 10 personer (1 kula per person): <\/em><\/strong><\/p>\n\n\n\n<p class=\"has-medium-font-size\">6 rabarberstj\u00e4lkar, motsvarande ca 500 gram, skalade och skurna i tunna skivor<\/p>\n\n\n\n<p class=\"has-medium-font-size\">1 1\/2 dl socker (h\u00e4r blir det faktiskt b\u00e4ttre med vanligt vitt socker f\u00f6r att f\u00e5 s\u00e5 vacker f\u00e4rg som m\u00f6jligt p\u00e5 sorbeten)<\/p>\n\n\n\n<p class=\"has-medium-font-size\">1 dl vatten<\/p>\n\n\n\n<p class=\"has-medium-font-size\">1\/2 &#8211; 1 dl flytande glykos (finns att k\u00f6pa i plastflaskor likt sirap)<\/p>\n\n\n\n<p class=\"has-medium-font-size\"><em>Rostad mandelmassa: <\/em><\/p>\n\n\n\n<p class=\"has-medium-font-size\">grovriven mandelmassa, utbredd p\u00e5 pl\u00e5t som t\u00e4ckts med bakpl\u00e5tspapper och rostats i ugn v\u00e4rmd till 110 grader, ca 20 minuter &#8211; kontrollera att mandelmassan blivit h\u00e5rd och knaprig utan att ta f\u00f6r mycket f\u00e4rg<\/p>\n\n\n\n<p class=\"has-medium-font-size\"><em>Till servering: <\/em><\/p>\n\n\n\n<p class=\"has-medium-font-size\">l\u00f6svispad gr\u00e4dde (jag anv\u00e4nde Valio laktosfri gr\u00e4dde) smaksatt med en aning finkornigt r\u00e5socker och ganska rikligt med nymald kardemumma<\/p>\n\n\n\n<p class=\"has-medium-font-size\">tara blommor s\u00e5som pens\u00e9er att dekorera med<\/p>\n\n\n\n<p class=\"has-medium-font-size\"><strong><em>G\u00f6r s\u00e5 h\u00e4r: <\/em><\/strong><\/p>\n\n\n\n<p class=\"has-medium-font-size\">L\u00e4gg den skalade skivade rabarbern i en kastrull med sockret och vattnet. L\u00e5t sjuda \u00f6ver medelh\u00f6g v\u00e4rme, dra ner v\u00e4rmen n\u00e5got s\u00e5 det sjuder och rabarbern &#8221;sm\u00e4lter&#8221; och blir en mjuk kompott. Det \u00e4r bra med viss fr\u00e4sch\u00f6r, s\u00e5 l\u00e5t rabarbern bara precis bli mjuk. Tag kastrullen av v\u00e4rmen och r\u00f6r i glykosen, r\u00f6r runt. L\u00e5t svalna en aning och k\u00f6r sedan i mixer eller med en stavmixer till en ganska sl\u00e4t pur\u00e9. St\u00e4ll kallt att svalna. H\u00e4ll sedan i glassmaskin och k\u00f6r den tills den stelnat. L\u00e4gg i en plastbunke med lock, l\u00e5t den g\u00e4rna st\u00e5 i frysen innan s\u00e5 den \u00e4r helt kall n\u00e4r du l\u00e4gger ner sorbeten f\u00f6r att den inte ska sm\u00e4lta. St\u00e4ll in i frysen fram till ett litet tag f\u00f6re servering. <\/p>\n\n\n\n<p class=\"has-medium-font-size\">Rosta mandelmassan, vilket g\u00e4rna kan g\u00f6ras n\u00e5gon dag i f\u00f6rv\u00e4g d\u00e5 den h\u00e5ller utm\u00e4rkt i en bunke med lock i rumstemperatur i n\u00e5gon vecka. <\/p>\n\n\n\n<p class=\"has-medium-font-size\">Vispa gr\u00e4dden med aningen socker och kardemumma, helst nymald. Jag har alltid en pepparkvarn som \u00e4r vigd \u00e5t kardemummak\u00e4rnor &#8211; det \u00e4r s\u00e5 mycket godare med helt nymald kardemumma. <\/p>\n\n\n\n<p class=\"has-medium-font-size\"><em>Vid servering: <\/em><\/p>\n\n\n\n<p class=\"has-medium-font-size\">Tag fram sorbeten, n\u00e4r den \u00e4r lagom mjuk formar du kulor med en glasskopa och l\u00e4gger i sk\u00e5lar eller couper. Toppa med l\u00f6svispad gr\u00e4dde och str\u00f6 mandelsmul \u00f6ver, dekorera med blomma.
