Id\u00e9n fick jag d\u00e5 jag tyckte att de oliver som man framf\u00f6r allt f\u00f6rr var h\u00e4nvisad till h\u00e4r i Sverige var s\u00e5 tr\u00e5kiga medan jag i sydfrankrike k\u00f6pt magiska oliver i olika marinader. \u00c4ven de tr\u00e5kigaste burkoliver blir uppiggade av att l\u00e4gga dem i denna korta enkla marinad. Jag brukar g\u00f6ra det strax innan g\u00e4sterna kommer. Helst anv\u00e4nder jag kalamataoliver eller andra goda svarta oliver. Ibland anv\u00e4nder jag gr\u00f6na oliver, men numera f\u00e5r man tag p\u00e5 riktigt bra s\u00e5dana av sorterna Manzanilla, Cerignola eller Castelvetrano (kallas \u00e4ven Nocellara). <\/p>\n\n\n\n<p class=\"has-medium-font-size wp-block-paragraph\">Den \u00f6verblivna marinaden kan du \u00e5teranv\u00e4nda n\u00e5gon dag senare f\u00f6r en ny omg\u00e5ng oliver alternativt h\u00e4lla p\u00e5 din mat, p\u00e5 gr\u00f6nsaker eller sallad. <\/p>\n\n\n\n<p class=\"has-medium-font-size wp-block-paragraph\"><strong><em>Du beh\u00f6ver:<\/em><\/strong><\/p>\n\n\n\n<p class=\"has-medium-font-size wp-block-paragraph\">svarta oliver p\u00e5 burk, med eller utan k\u00e4rnor<\/p>\n\n\n\n<p class=\"has-medium-font-size wp-block-paragraph\">en nypa chiliflingor (jag anv\u00e4nder g\u00e4rna den koreanska torkade gochugaru med sin aromatiska smak som liknar en annan favorit, den franska Espelettechilin)<\/p>\n\n\n\n<p class=\"has-medium-font-size wp-block-paragraph\">g\u00e4rna 1\/2 tsk zatar, en \u00f6rtkryddsblandning fr\u00e5n Mellan\u00f6stern med bland annat timjan och sumak &#8211; kan ers\u00e4ttas av f\u00e4rsk eller torkad timjan, eventuellt tillsammans med rosmarin eller blandade franska \u00f6rtkryddor<\/p>\n\n\n\n<p class=\"has-medium-font-size wp-block-paragraph\">g\u00e4rna det finrivna skalet av 1\/2 &#8211; 1 citron<\/p>\n\n\n\n<p class=\"has-medium-font-size wp-block-paragraph\">g\u00e4rna f\u00e4rska finhackade \u00f6rtkryddor (timjan, rosmarin, k\u00f6rvel, mejram&#8230;)<\/p>\n\n\n\n<p class=\"has-medium-font-size wp-block-paragraph\">en god mild olivolja att ringla \u00f6ver<\/p>\n\n\n\n<p class=\"has-medium-font-size wp-block-paragraph\"><strong><em>G\u00f6r s\u00e5 h\u00e4r: <\/em><\/strong><\/p>\n\n\n\n<p class=\"has-medium-font-size wp-block-paragraph\">H\u00e4ll av spadet fr\u00e5n oliverna, sk\u00f6lj dem eventuellt helt kort i kallt vatten och l\u00e5t de st\u00e5 och lufttorka ett tag. L\u00e4gg dem i en vacker sk\u00e5l som du kan servera dem ur. Str\u00f6 kryddorna \u00f6ver, ringla \u00f6ver olivolja, blanda runt och toppa g\u00e4rna med n\u00e5gra f\u00e4rska \u00f6rter. L\u00e5t st\u00e5 i rumstemperatur tills g\u00e4sterna kommer. Servera till f\u00f6rdrinken. \u00d6verblivna oliver st\u00e4lls in i sk\u00e5len i kylen, med plast eller en tallrik \u00f6ver. <\/p>\n\n\n\n<p class=\"has-medium-font-size wp-block-paragraph\">Bon app\u00e9tit \u00f6nskas med v\u00e4nliga matglada h\u00e4lsningar fr\u00e5n Katinkas Kitchen!
