{"id":7609,"date":"2022-05-03T03:00:00","date_gmt":"2022-05-03T01:00:00","guid":{"rendered":"http:\/\/katinkaskitchen.com\/?p=7609"},"modified":"2022-12-04T12:32:41","modified_gmt":"2022-12-04T11:32:41","slug":"pasta-puttanesca-2","status":"publish","type":"post","link":"https:\/\/katinkaskitchen.com\/?p=7609","title":{"rendered":"Pasta puttanesca"},"content":{"rendered":"<h3><\/h3>\n<h3>Idag plockar jag fram en gammal favorit &#8211; pasta puttanesca &#8211; med sina h\u00e4rliga medelhavska smaker av sardeller, citron, tomat, vitl\u00f6k och \u00f6rter. \u00a0\u00d6verbliven mat kan \u00e4tas kall som en pastasallad med lite extra olivolja och citron till n\u00e5got gott.\u00a0<a href=\"http:\/\/katinkaskitchen.com\/?attachment_id=7951\" rel=\"attachment wp-att-7951\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-7951\" src=\"http:\/\/files.katinkaskitchen.com\/2012\/02\/pasta-puttanesca-on-table-2-Katinkas-Kitchen-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/files.katinkaskitchen.com\/2012\/02\/pasta-puttanesca-on-table-2-Katinkas-Kitchen-300x225.jpg 300w, https:\/\/files.katinkaskitchen.com\/2012\/02\/pasta-puttanesca-on-table-2-Katinkas-Kitchen-150x112.jpg 150w, https:\/\/files.katinkaskitchen.com\/2012\/02\/pasta-puttanesca-on-table-2-Katinkas-Kitchen.jpg 320w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/h3>\n<h4><em>Du beh\u00f6ver:<\/em><\/h4>\n<p>Pasta av n\u00e5gon god sort och form \u2013 traditionellt spaghetti till denna s\u00e5s -\u00e4ven om barnen ofta v\u00e4ljer farfalle eller penne<\/p>\n<p>1 burk sardellfil\u00e9er, helst de i olivolja<\/p>\n<p>3 msk olivolja<\/p>\n<p>2 klyftor hackad vitl\u00f6k<\/p>\n<p>1 liten citron eller en halv citron<\/p>\n<p>g\u00e4rna en skv\u00e4tt vitt vin<\/p>\n<p>1-2 f\u00f6rpackningar passerade eller krossade tomater (eller blandning av b\u00e5da)<\/p>\n<p>\u00d6rtkryddor (t.ex. timjan, basilika, lite oregano \u2013 den tar annars l\u00e4tt \u00f6ver smaken!)<\/p>\n<p>En nypa socker, g\u00e4rna r\u00e5socker<\/p>\n<p>4 msk kapris<\/p>\n<p>Om man vill: lite chili<\/p>\n<h4><em>G\u00f6r s\u00e5 h\u00e4r:<\/em><\/h4>\n<p>Under tiden som du kokar pasta fr\u00e4ser du hackad vitl\u00f6k i olivolja och tills\u00e4tter hackade sardeller, fr\u00e4ser en stund och pressar i en halv citron som du sedan l\u00e4gger i (anv\u00e4nd helst ekologisk eller tv\u00e4tta den noga innan). Tills\u00e4tt ev. lite vitt vin, l\u00e5t puttra ihop n\u00e5gon minut. Sardellerna kokar i princip s\u00f6nder i den h\u00e4r s\u00e5sen och blir bara en ljuvlig ton som verkligen g\u00f6r r\u00e4tten. H\u00e4ll i de passerade tomaterna, smaks\u00e4tt med lite \u00f6rtkryddor efter smak och n\u00e5gon nypa socker (alltid socker i tomats\u00e5ser! Det \u00e4r f\u00f6r att lyfta fram tomatens hela smakpotential \u2013 till fyllig mild solmogen s\u00f6tma. Ett knep man ofta anv\u00e4nder i b\u00e5de Italien och Spanien). H\u00e4ll i kaprisen mot slutet av kokningen. Den h\u00e4r s\u00e5sen beh\u00f6ver inget salt \u2013 sardellerna tillsammans med kaprisen och \u00f6vriga smaker ger \u00e4nd\u00e5 en fin angen\u00e4m s\u00e4lta. Den som vill kan hetta upp den n\u00e5got med en liten bit finhackad chili, alternativt n\u00e5gra flagor torkad chili. Servera g\u00e4rna med nyriven parmesan.<\/p>\n<p>Den h\u00e4r s\u00e5sen brukar faktiskt vara riktigt popul\u00e4r hos barn (!) \u2013 oftast f\u00f6rutsatt att de inte k\u00e4nner till ingredienserna i f\u00f6rv\u00e4g. S\u00e5sen g\u00f6r sig \u00e4ven mycket bra i kalla pastasallader. Blanda ihop s\u00e5sen med pastan och l\u00e5t svalna.
