Min man tycker gr\u00f6n sparris mest \u00e4r att likna vid broccoli, som ocks\u00e5 \u00e4r en sl\u00e4kting. Eftersom maken \u00e4r uppvuxen i Tyskland d\u00e4r man verkligen vurmar f\u00f6r sin fantastiska vita sparris m\u00e5 det vara h\u00e4nt, men jag gillar b\u00e5de gr\u00f6n och vit, och tycker de \u00e4r s\u00e5 pass olika att upplevelsen blir v\u00e4ldigt varierad beroende p\u00e5 vilken jag v\u00e4ljer. Den tyska vita sparrisen finns i olika kvaliteter som har olika tjocklekar. De finaste \u00e4r de som \u00e4r tjocka men fortfarande med tunt skal, mj\u00e4lla och fina och inte s\u00e5 fibriga. P\u00e5 marknaderna i Sverige f\u00e5r vi s\u00e4llan de av den h\u00f6gsta kvaliteten, men de h\u00e5ller ofta god kvalitet. Tyskarna serverar g\u00e4rna sin sparris med skirat sm\u00f6r och n\u00e5gra skivor kallr\u00f6kt&nbsp;skinka&nbsp;(Katenschinken). De serverar g\u00e4rna dessutom petersilienkartoffeln till &#8211; sm\u00f6rslungad potatis med persilja.<\/h3>\n<h3>Fransm\u00e4nnen, vars vita sparris ofta \u00e4r lite tunnare \u00e4n den tyska, serverar den g\u00e4rna med hollandaise, ibland smaksatt med apelsin och f\u00e5r d\u00e5 namnet Sauce Maltaise (s\u00e5s fr\u00e5n Malta). Med vispad gr\u00e4dde i hollandaisen blir det Sauce Mousseline. Ett annat franskt alternativ \u00e4r en b\u00e9chamels\u00e5s gjord p\u00e5 gr\u00e4dde och smaksatt med citron, en Sauce Cr\u00e8me. De serverar \u00e4ven sin sparris med en ljuvlig sm\u00f6rs\u00e5s med citronsmak, Beurre au citron. Till kall sparris f\u00f6resl\u00e5r den fantastiska kokboken Det Goda Franska K\u00f6ket, av bl.a. Julia Child, vinaigrette, kanske med \u00f6rter, schalottenl\u00f6k och kapris som d\u00e5 blir en Sauce Ravigote. Andra alternativ \u00e4r senapss\u00e5s med \u00f6rter eller en hemslungad majonn\u00e4s. kanske med hackad \u00e4gg eller med bacont\u00e4rningar, ibland \u00e4ven med t\u00e4rnat tomatk\u00f6tt till.<a href=\"http:\/\/files.katinkaskitchen.com\/2012\/04\/IMG_1030.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-22503\" src=\"http:\/\/files.katinkaskitchen.com\/2012\/04\/IMG_1030-300x247.jpg\" alt=\"IMG_1030\" width=\"300\" height=\"247\" srcset=\"https:\/\/files.katinkaskitchen.com\/2012\/04\/IMG_1030-300x247.jpg 300w, https:\/\/files.katinkaskitchen.com\/2012\/04\/IMG_1030-150x123.jpg 150w, https:\/\/files.katinkaskitchen.com\/2012\/04\/IMG_1030-1024x842.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/h3>\n<h3>Sparris har mycket umamismak och anses d\u00e4rf\u00f6r vara en d\u00e5lig kombination med vin. Tidigare h\u00e4vdades det att man bara kunde dricka vatten till sparris. Det r\u00e5det&nbsp;tycker&nbsp;tyskarna \u00e4r rent nonsens. De serverar mycket g\u00e4rna vin p\u00e5 Silvanerdruvan, Riesling eller Pinot Gris (som p\u00e5 tyska heter Grau Burgunder) till sin sparris. Och jag tycker de har helt r\u00e4tt i det.<\/h3>\n<h3>N\u00e5gra vintips: Till sparris \u00e4r det givna valet en torr Riesling &#8211; pr\u00f6va s\u00e5 f\u00e5r du se! Det \u00e4r det enda vin som klarar sparris.
