Koka sparrisen i saltat vatten. Det brukar ta ca 20-30 minuter, men beror p\u00e5 tjockleken. Kolla s\u00e5 sparrisen inte blir f\u00f6r \u00f6verkokt.<\/p>\n<p>Sm\u00e4lt sm\u00f6ret i en kastrull. L\u00e5t de mj\u00f6lkvita mj\u00f6lkresterna sjunka till botten och h\u00e4ll sedan av det klara sm\u00f6ret. Det kan du sedan v\u00e4rma upp igen utan problem. Det \u00e4r mj\u00f6lkresterna som br\u00e4nns och smakar lite beskt, men det klarade sm\u00f6ret klarar h\u00f6gre temperaturer (det \u00e4r d\u00e4rf\u00f6r indierna anv\u00e4nder det &#8211; kallas f\u00f6r ghee).<\/p>\n<p>N\u00e4r sparrisen \u00e4r f\u00e4rdigkokt h\u00e4ller du av vattnet och arrangerar sparrisarna vackert p\u00e5 ett stort fat eller p\u00e5 varje portionsfat. H\u00e4ll p\u00e5 lite sm\u00e4lt sm\u00f6r och arrangera den kallr\u00f6kta skinkan vackert ovanp\u00e5. Servera direkt. St\u00e4ll g\u00e4rna fram en liten s\u00e5ssnipa med det sm\u00e4lta klarade sm\u00f6ret och kanske mer skinka p\u00e5 ett fat f\u00f6r g\u00e4sterna att fylla p\u00e5 med.<\/p>\n<p>Den som vill servera Petersilienkartoffeln kokar helt enkelt skalad potatis samtidigt som sparrisen kokas.
